I am not a breakfast person. I can make you eggs, any way you like but I rarely prepare them for myself. However, once a week, we make a sit down breakfast. This event consists of bacon or sausage, eggs - whatever style you are feeling & my sourdough pancakes.
I heard of sourdough pancakes one evening while watching one of those traveling shows. They were featuring a restaurant in Alaska that served enormous sourdough pancakes from a 100 yr. old starter. I, as you know, keep a starter and I thought it was a great way to cross utilize the ingredient. The recipe is simple & easily committed to memory. If you have a starter going, you are 50% there. If you do not have a starter, see blog post A Star-ter is Born on how to make your own. You’ll need at least 24 hours before the starter is ready for use. Here is the recipe for Sourdough Pancakes:
Ingredients:
1 cup Sourdough Starter
1 egg
2 Tbl. Butter, melted
2 Tbl. Sugar
1 tsp. baking soda
1/4 tsp. Kosher Salt
3/4 cup milk
3/4 cup All-Purpose Unbleached Flour
Step 1: Add starter to mixing bowl; whisk in egg & melted butter till smooth
Step 2: Mix sugar, salt & soda in to starter/egg mixture; add milk & whisk till smooth
Step 3: Add flour & whisk till smooth; let rest for 30 min.
Step 4: Make pancakes!
If you want to spice it up add desired spice while mixing the batter. I like to add a teaspoon of vanilla or 1/2 tsp. of cinnamon or sometimes both.
Here is a list of some add-ins to mix up your pancake experience. Add to the pancake a quarter of the way through the cooking process. -After initial placement on griddle but before its time to flip
Bananas, Sliced
Berries - if using frozen, keep frozen till ready to use
Chocolate Chips
Apples, Grilled
Pineapple, Grilled or Crushed
Raisins
Craisins
Pears, diced small
Peaches, sliced thin
Pancake toppings are a matter of debate around here. The three years I spent living in Vermont compels me to compel you to spend the extra dough on real Maple Syrup. I try to stay away from imitators if possible. Assorted fruit syrups like Guava or Blackberry are also delish.
My favorite attribute of pancake batter is it’s a blank canvas! So, use your imagination and don’t be afraid to try something new.
